This is one of my kids' favorite snacks during the summer. You can "pop" one out of the freezer whenever they need a cool treat. Keep in mind that the best fruits to use are berries and stone fruit because of their consistency. If you use bananas, let them turn brown first. Apples and pears should be cooked slightly beforehand.
Ingredients
- 1 cup of fruit
- 1 teaspoon of lemon juice
- 1 tablespoon of water (more may be needed)
- 32 oz container of plain or vanilla yogurt
- 1 packet of plain gelatin
- Honey, optional
Instructions
- Put the fruit in a food processor with lemon juice and water. Puree until smooth and put in a large bowl with the remaining ingredients; whisk together. Pour into popsicle molds or paper cups. Freeze about two hours until firm.
