Using Balsamic Vinegar for Quick Dinners

Yesterday, I took W to see Brave. We got out late in the afternoon, so I didn’t have a lot of time to prepare dinner. As you know, I am a huge lover of balsamic vinegar. I have found a new product that makes it easy to prepare a quick meal for my family.

Gourmè Mist™ is the maker of five calorie balsamic vinegar and cooking sprays. They have recently developed a new product: Single Serving Balsamic Squeeze Packets. These little packets contain a lot of flavor, but just the right amount to add to dressings, marinades, and toppings. They are great for on-the-go and come in three flavors:

  • Balsamic
  • Balsamic and Pomegranate
  • Balsamic and Raspberry

I used a packet of Balsamic to marinate two chicken breasts and another while cooking them. Nothing else was added. The balsamic vinegar helped to seal in the moisture of the chicken as it caramelized, yet gave it a wonderful sweet flavor.

I also used the Gourmè Mist™ sprays to make an asparagus side dish. For this dish, I used:

  • One bunch of asparagus
  • Gourmè Mist™ Organic Extra Virgin Olive Oil Spray Mister
  • Gourmè Mist™ Balsamic and Pomegranate Spray Mister
  • salt and pepper, to taste
  • 2 T Gorgonzola or blue cheese
  • 2 T crushed pecans

 

First I washed and trimmed the asparagus. I find that the easiest method to trim it is to just hold it gently and bend it until it breaks. I demonstrate it below:

I lay out the asparagus tips on a cooking sheet.

Then I gave it a couple spritzes each of extra virgin olive oil and balsamic vinegar.

I cooked the asparagus for ten minutes at 350°F then added the cheese and pecans. I then returned it to the oven for 15-20 minutes.

 This was a delicious way to serve asparagus. I like the sweetness of the balsamic vinegar, the tartness of the gorgonzola, and the crunch of the pecans. Such a flavorful dish for only a few minutes time!

Balsamic Asparagus with Gorgonzola and Pecans

Ingredients

  • Gourmè Mist™ Organic Extra Virgin Olive Oil Spray Mister
  • Gourmè Mist™ Balsamic and Pomegranate Spray Mister
  • Bunch of Asparagus
  • Salt and Pepper
  • 2 T Gorgonzola or Blue Cheese
  • 2 T Crushed Pecans

Instructions

  1. Preheat oven to 350.
  2. Trim asparagus. Lay on baking tray.
  3. Spray with olive oil and vinegar.
  4. Salt and pepper to taste.
  5. Bake for ten minutes.
  6. Add cheese and pecans.
  7. Return to oven for 10-15 minutes.
