We are always looking for quick snacks for the children that they will enjoy. They both love fruit, but it’s hard to store for a long period of time, especially during the summer. We recently discovered some dried fruits from Bella Viva Orchards that were the perfect solution.

We received a box of the most delicious looking assortment of dried fruits. I rarely see whole fruit look like this. The California White Apricots and the Dried White Nectarines were juicy and plump, while the Dried Tart Apple Rings were large and crisp. It goes without saying that the kids attacked the box immediately.

We had some fruit left over, so I decided to make some scones with the apples, a perfect accompaniment to our Scotland study this week. I found a traditonal Scottish scones recipe online and altered it for the ingredients we had on hand. For this recipe, we needed:
- all-purpose flour
- salt
- baking powder
- butter
- granulated sugar
- almond milk
- sucanat
- dried apple rings

First, I simmered the apple rings for 30 minutes. After they cooled, I chopped them up and set them aside to use later.

This is the way I sift flour, salt, and baking soda, as my sifter broke and I have yet to replace it.

I switched to the paddle attachment before adding the butter.

I added the sugar and poured in the almond milk. The original recipe called for the milk to added last, but I am used to adding textured ingredients like the apples last.
After I added the apples, I pat out the dough onto a greased cookie sheet. I don’t like to roll dough when I can help it. Too messy! Next I scored the round eight times.

After baking at 400°F for 20-25 minutes, we had a tasty breakfast of apple scones and organic jam. They were so tasty; the apples added the perfect texture to one of my favorite treats. The kids loved them as well–there were no leftovers!
Ingredients
- 10-15 dried apple slices
- 2 Cups all-purpose flour
- ½ teaspoon salt
- teaspoon baking powder
- ½ stick butter
- ¼ cup granulated sugar
- ½ cup almond milk, plus extra for glaze
- 2 Tablespoons sucanat
Instructions
- Cover the apple slices with water and simmer, covered for 30 minutes.
- Finely chop the apple and set aside.
- Pre-heat the oven to 400F.
- Sift together the flour, salt and baking powder.
- Mix in the butter.
- Add the sugar and milk.
- Combine with the apple.
- Pat out onto greased baking sheet into a round about ¼" thick.
- Score dough into eight wedges.
- Brush the top with milk
- Sprinkle with the sucanat.
- Bake for 20-25 minutes.
