I have a lot of recipe books that I look to for inspiration when I can’t think of something to make for dinner. But sometimes, I actually come up with something on my own! This is a simple recipe based on our love of artichokes and Alfredo sauce.
Tomato and Artichoke Alfredo
For the recipe, you will need
- butter
- minced garlic
- parmesan cheese
- heavy whipping cream
- artichoke hearts
- diced tomatoes
- cooked pasta
- salt and pepper
First, melt a little butter in a heavy pot and throw in the garlic. Cook the garlic for about five minutes then add the cream. Over medium heat, stir continuously until the cream begins to thicken. Add the cheese and whisk until it is melted. When the mixture has thickened up considerably, add the artichokes.
Cook for five minutes, then add the tomatoes. The tomatoes will add some extra liquid, so you may want to cook it five minutes more before adding the pasta. Once you have combined the sauce with the pasta, heat it until warmed through.
This isn’t a very hard dish at all and should take about thirty minutes to make. Enjoy!

- 4 Tablespoons butter
- 1 1/2 teaspoons minced garlic
- 1 pint heavy whipping cream
- 3 ounces grated parmesan cheese
- 1 can artichoke hearts, drained and chopped
- 1 can diced tomatoes, drained
- 8 ounces cooked pasta
- salt and pepper, to taste
Instructions
- Melt butter in a large, heavy pan.
- Cook garlic in butter for five minutes,
- Add heavy cream and cook until slightly thickened.
- Add the parmesan cheese and whisk until thickened.
- Add artichokes and cook for five minutes.
- Add tomatoes and cook five additional minutes.
- Add pasta and heat until warm
