I may not be much of a football fan, but my husband is. I usually don’t watch the Super Bowl when it comes on, preferring instead to make him food for the game. These Reuben Canapés are his most requested snack for game time.
Super Bowl Snacks: Reuben Canapés
- One loaf rye bread
- 7 oz corned beef, cut into small pieces
- 8 oz Swiss cheese, cut into small cubes
- 1/2 cup thousand island dressing
- 4 oz cream cheese
- 1 cup sauerkraut
Preheat oven to 350°. With a bread knife, cut the rye loaf into four pieces. Lay pieces out on a cookie sheet and bake for about five minutes.
Since you only need half on the cream cheese, go ahead and freeze the rest. You can bring it to room temperature to use in dips and fillings. Combine the remaining cream cheese with the dressing.
Drain a little of the liquid from the sauerkraut and add it to the cream cheese mixture.
Next, mix in the corned beef and cheese. If you like, you can reserve some of the cheese for the tops of the canapés.
These are a quick alternative to serving full-sized sandwiches. My husband loves them and I hope you will too!
